2/3 cup sugar
2 Tbsp cocoa powder
3 Tbsp cornstarch (maicena)
1/4 tsp salt
1 cup heavy whipping cream
1 cup whole milk
4 oz semi-sweet chocolate, chopped (about 3/4 cup)
2 Tbsp unsalted butter
1/2 tsp peppermint extract
For the Topping:
15 chocolate wafers (or any chocolate cookie)
1 Tbsp unsalted butter, melted
6 fresh mint sprigs (for garnish)
Instructions
For the Pudding:
In a medium heavy-bottomed saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
Add a splash of cream and whisk until no lumps remain. Gradually add the rest of the cream and milk, whisking to combine.
Heat the mixture over medium heat, stirring frequently, until it begins to bubble and thicken.
Remove from heat and stir in chopped chocolate, butter, and peppermint extract until smooth.
Divide the pudding evenly among small jars or ramekins. Chill for at least a few hours, ideally overnight, until set.
For the Topping:
